INGREDIENTS
- 2 firm-fleshed potatoes
- 4 c. olive oil
- salt and pepper
- dry herbs (optional)
PREPARATION
STEP 1- You have the choice of peeling your potatoes or keeping the skin to give them a rustic side but you will have to wash them to remove the soil.
STEP 2
- Prepare a large bowl filled with cold water (be careful not to top because the potatoes will take up space, add it if necessary at the end of cutting).
STEP 3
- Cut the potatoes into thin slices through a robot if you are lucky enough to have one, otherwise I recommend the mandolin. You can also opt for cutting with a good sharp knife (tested), your slats will be less uniform and less thin but it still works.
STEP 4
- Soak apple slices in water as you cut, 15-20 min. To remove the starch that makes them stick.
STEP 5
- Drain and wipe between two clean towels or paper towels.
STEP 6
- Place the coverslips in a single layer on a baking sheet covered with baking paper. Sprinkle the slices with a few drops of oil, sprinkle with salt, possibly pepper and herbs of your choice.
STEP 7
- Bake at 140 ° C for about 40 minutes (and turn halfway through cooking). Be careful, some chips may cook faster, so watch the cooking and remove those that start to brown before the end of the time.
STEP 8
- Repeat until all the slices of potatoes are gone.
STEP 9
- On leaving the oven, place the chips on paper towels to remove the excess fat.
STEP 10
- Savor without delay because they soften with time and therefore do not keep ... and yes, it's natural!
